Dairy Free Cashew Caramel Banana Bread

I’ve really been trying to be more intentional about what I eat and how I cook. The ingredients I use and where they come from have become so important to me. The more and more that I incorporate better ingredients into my meals the better I feel. School is officially back in session and with all of the hassle of prepping lunches and keeping up with afterschool activities, I had to come up with a quick and easy solution for breakfast.

That’s where this delicious dairy free cashew caramel banana bread comes in. I whipped up some really good cashew caramel banana bread over the weekend so that I can take my breakfast on the go during my dreaded morning back to school drop off. It seems like it takes forever to get through the line in the morning but luckily this gets me through it.

For this recipe, I used the best ingredients including Silk® Almondmilk and Cashewmilk with Caramel. I chose to use almond milk because not only does it add a nutty flavor but the caramel adds a little extra sweetness that’s needed for breakfast. I tend to usually use refrigerated almond milk but I came across the convenient shelf stable 4-pack bottles on our last shopping trip at Walmart and decided to give them a try. The 4-packs are great especially since we’re on the go a lot. We don’t have to worry about refrigerating them until after they’re opened and we don’t have to sacrifice the delicious taste. The milk is also free of dairy, lactose, gluten, casein, egg and MSG. It’s also 100% cholesterol free, has 0g of sugar, and doesn’t have any saturated fat. Talk about amazing!

Dairy Free Cashew Caramel Banana Bread

Ingredients

  • 1/3 cup grapeseed oil (coconut oil or vegetable oil works fine too)
  • 1/2 cup honey or maple syrup
  • 2 eggs
  • 1 cup mashed ripe bananas (2 large bananas)
  • 1/4 cup Silk Almond w/ Cashew Caramel Milk (use water for a lower calorie option)
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 3 cups almond flour

Instructions

  1. Preheat the oven to 325 degrees.
  2. Grease a 9×5 inch loaf pan.
  3. Mash the bananas in a mixing bowl and gradually add in the milk.
  4. In a large bowl, beat the oil and honey together using a whisk.
  5. Whisk the banana and milk mixture into the oil and honey.
  6. Whisk the baking soda, vanilla, and salt into the other ingredients.
  7. Next, mix in the almond flour using a spatula or spoon. Some lumps are ok!
  8. Pour the batter into the greased loaf pan.
  9. Bake for 55 to 60 minutes, or until an inserted toothpick into the center comes out clean.
  10. Let the bread cool for about 15 minutes in the loaf pan before transferring it to slice.
