Desserts with minimal ingredients and a quick prep time are huge lifesavers. Growing up cheesecake was a huge favorite of mine but of course after becoming a mom I found myself with less time to make it as often as I would like.
I came up with this recipe around Girl Scouts cookie season. We had some leftover cookies and I wanted to use them in a fun way. These mini no bake cheesecake tarts are topped with Samoas and coconut flakes for a little extra flair. If you want the coconutty crunch mixed into your tarts, you can chop them up and toss them into the mix. In about 2 hours this deliciously sweet dessert will be ready to serve for all of your guests or to keep in your arsenal of sweets for yourself.
If you’re wanting to cut the sweetness a bit, you can skip the cookies and opt for a fresh fruit topping instead.

Mini No Bake Cheesecake Tarts
Ingredients
- Pre-made mini graham cracker crusts (or homemade mini crust)
- 2/3 cup sugar
- 8oz cream cheese (softened)
- 1/2 cup heavy whipping cream
- 1/4 tsp vanilla extract
Instructions
- Combine sugar and cream cheese until smooth.
- In a separate bowl, combine heavy whipping cream and vanilla until a soft peak forms.
- Combine all ingredients by mixing together.
- Transfer filling into individual crusts.
- Cool for at least 2 hours.
- Before serving, top with coconut flakes, fruits, or Girl Scout cookies as pictured.
- Serve and enjoy.
