Ever thought about baking an avocado? I got creative with my meal and a baked avocado egg topped with creamy feta cheese was born.
When I was a kid, I remember the sheer disgust on my face as my Dad would cut open an avocado. The thought of eating anything green and mushy was the least bit appealing to me. Now, avocados are life. Literally. Avocados are the new it food. So much so that there are shortages from time to time. I would’ve never thought as a kid that there would ever be a shortage because I never thought people liked them so much.
Honestly, I thought avocados were something only people from the islands ate because my Dad was the only person I knew that ate them. Now as an adult, Tatiana stands in my shoes. She cannot stand the sight of avocados. Don’t even try getting her to eat one because it is not going to happen. I’m proud to say now that I love avocados. I love how they can be a stand alone dish, a side dish, or the perfect compliment to any meal. Since I discovered my new found love of avocados, I’ve been trying all types of recipes.

Baked Avocado Egg with Feta Cheese
Makes 2 baked avocado eggs
Ingredients
- 1 avocado
- 2 large eggs (Eggland’s Best are my fave!)
- feta cheese
Instructions
1. Cut the avocado in half.
2. Remove the pit.
3. Place avocados into an oven safe dish, face up.
4. Crack one egg into each of the avocados.
- *If the avocado has a small center, scoop some of the avocado center out.
5. Season with a dash of salt and pepper.
6. Bake in the oven at 425 degrees for 15 minutes.
7. Remove from the oven.
8. Sprinkle with feta cheese.
9. Enjoy!

I haven’t had Feta cheese in forever! This combo of egg, avocado, and egg sounds so amazing.
You could use another kind of cheese too but I love the creamy taste of feta.
