Watermelon is one of my favorite fruits so of course I had to incorporate it into this recipe. I’m putting a delicious twist on a traditional recipe. When I say this is quite possibly one of the easiest recipes you’ll ever make for your next summer gathering, I’m not exaggerating.
Watermelon and Goat Cheese Fruit Kebabs
When it comes to summer treats, watermelon is undoubtedly the star of the show. We’ve used it in a crazy number of recipes including this vegan watermelon salad. I even hosted an entire watermelon party where I created multiple easy watermelon recipes that people could recreate at home. Its vibrant color and juicy sweetness make it a perfect choice for a refreshing snack. But have you ever thought of pairing watermelon with goat cheese? The combination might seem unconventional at first, but trust me, it’s a match made in heaven. Anyone you make this for is sure to love it.
It’s the perfect blend of flavors and textures that will leave your taste buds craving for more. Whether you’re hosting a summer gathering or simply looking for a unique and healthy snack, these kebabs are sure to impress both your guests and yourself.
Ingredients
- Fresh watermelon (seedless), cut into bite-sized cubes
- Goat cheese, cut into small cubes (you can opt for a different cheese if goat cheese isn’t your favorite)
- Fresh mint leaves, torn into smaller pieces (optional)
- Balsamic glaze (optional, for drizzling)

Instructions
- Cut your watermelon into bite size cubes. The size of the cubes should be big enough to be easily skewered but small enough for a single bite.
- Next, take the goat cheese and cut it into cubes that are similar in size to the watermelon.
- Take your skewers and start by threading a cube of watermelon onto the skewer, followed by a cube of goat cheese. Continue this pattern until you have filled the skewer, leaving enough space on the end to hold it comfortably.
- Repeat the process with the remaining skewers.
- Drizzle a balsamic glaze over the kebabs just before serving.
- Arrange the finished kebabs on a platter or a serving dish.



Tips for The Best Watermelon Goat Cheese Kebabs
Here’s a few things to keep in mind when preparing your fruit kebabs. Choosing a ripe and sweet watermelon is essential to enhance the overall flavor of the kebabs. You definitely can’t have the perfect kebabs without a sweet watermelon. Select a seedless variety for convenience, as it saves time and effort during preparation. Goat cheese adds the perfect flavor and texture to these kebabs but you can always use a different type of cheese. Mozzarella would be a nice alternative. I like to cut my cheese into cubes first then slightly freeze them for a few minutes before I assemble the fruit kebabs. 15-20 minutes is an ideal time for freezing/refrigerating. This helps to keep the cheese from melting too quickly after I serve the appetizer.
Mint adds a refreshing note to the kebabs and complements the flavors of watermelon and goat cheese beautifully. Mint leaves are totally optional however as not everyone loves the flavor. If you’re going to add mint, tear the fresh mint leaves into smaller pieces. You can use them as a garnish or in between the watermelon and goat cheese on the skewers.
The tanginess of the balsamic glaze complements the sweetness of the watermelon and adds a delightful complexity to the dish. However, this step is optional, and if you prefer a simpler taste, you can skip the glaze. I love the balsamic glaze from Trader Joe’s but you can use any brand you choose.
