If you’re searching for breakfast ideas, look no further. This breakfast sandwich recipe is easy to make and perfect for enjoying at home or on the go.

I love a good breakfast sandwich recipe. Breakfast sandwiches are such a staple for us. They’re so easy to make and I love that you can use pretty much any ingredients you want to create the perfect sandwich. The breakfast sandwich recipe I’m about to share is tasty, easy to make and perfect for on the go.
You can easily scale this recipe up or down to feed your family. I usually make these sandwiches ahead of time if we’re going to have a super busy week. If you’re a meal planner, you can make these in bulk ahead of time and freeze them for later. For freezing I wrap each sandwich in parchment paper then vacuum seal each one. This makes it easy for my family to just grab and go for the week. If you’re going with the freezer route be sure to not melt your cheese before freezing. The cheese will melt once the sandwiches are reheated. An air fryer or microwave works perfectly for reheating.
If I’m making these sandwiches for my husband, I usually include them in a bowl with other breakfast foods. One sandwich usually isn’t enough and I like for him to have a little balance with his breakfast. I like to make a full breakfast bowl by using pre-sectioned meal prep bowls from Amazon. I usually include a breakfast sandwich and fruits.
Easy Breakfast Sandwich Recipe
All you need to make this sandwich is a few simple ingredients that you probably already have at home. What I love most about this recipe is that you can make it completely vegan, vegetarian or stick to making it with cheese and regular sausage.
Ingredients
- 1 sweet Hawaiian roll or bread of choice
- butter
- hash browns
- 1 folded egg (most of the time I use Just Eggs folded eggs because my kids love them so much and they’re a great vegan alternative to eggs)
- Vegan cheese slices (I love to use Violife cheddar, provolone or smoked gouda)
- 1 vegan sausage patty
Instructions
- Cut your bread in half.
- Lightly butter both sides of your bread and toast in a pan face down.
- Place your ingredients onto your bottom bun in this order: egg, cheese, hash brown, sausage patty, top bun. If you really love cheese like my family does you can use 2 slices of different cheese to add to your flavor profile.
