Homemade Fluffy Pancakes

  • 1 1/2 cups all-purpose flour
  • 3 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup sugar
  • 1 1/4 cups almond milk cow's milk works too
  • 1 egg
  • 3 tbsp coconut oil, melted melted unsalted butter works too
  • 1 tsp almond extract vanilla extract if you're not a fan of almond
  1. Add your dry ingredients together and mix.

  2. Melt the coconut oil in the microwave for about 30 seconds.

  3. Add the coconut oil, milk, egg, and almond extract to the dry ingredients. Whisk together.

  4. Heat a non-stick skillet to medium high heat.

  5. Pour 1/4 cup of batter onto the skillet for each pancake.Cook each side for 2-3 minutes. You'll know when it's time to flip once bubbles start to form on the top. Each side should be a light golden brown.
